Chitrannam

Chitrannam is a Andhra Festival Special dish also termed Pulihora. When there is leftover rice you can employ this recipe to make something delicious and healthy. The tangy flavored Chitrannam is a tasty dish that absorbs all flavors without making the rice mushy or sticky. Cashew nuts and Bengal Gram add a special texture and authenticity to the festive dish. The dish can be served with chutney dishes or spicy curries too. In South India this is a frequently prepared dish that is often served as breakfast dishes or can be served even for lunch or dinner. Ingredients
  

  • 1/2 kg Fine rice not Basmathi rice
  • 1 cup Tamarind extract
  • 150 gm Cashew
  • 1 cup Green chilli pieces
  • 10 nos Red chillies
  • 1/2 cup Ginger finely chopped
  • 2 tbsp Bengal gram Kadalaparippu
  • 1 tbsp Mustard seeds
  • 2 fist Curry leaves
  • 1 no Lemon
  • Salt As reqd
  • 1 tbsp Turmeric powder
  • 1 small Refined oil

Instructions
 

  • For preparing the healthy delicious dish, first add half of the green chilly pieces to tamarind paste and cook on low flame until it becomes thick. Keep this aside.
  • Meanwhile, cook the rice and take the cooked rice into a wide plate.
  • Add turmeric powder and 2 tbsp of oil and mix well until entire rice becomes uniform yellow.
  • Heat oil in a frying pan.
  • Add cashew nuts, Bengal gram, remaining green chilly pieces, red chillies, chopped ginger, mustard seeds and curry leaves and fry.
  • Add the above ingredients and salt to the rice.
  • Add the tamarind paste along with the green chilli pieces into the rice. Mix well.
  • Add lime juice if required.
  • The tasty rice dish is ready. Serve hot with chutney or any spicy curry dish.
