Drumstick Leaves-Egg Thoran

Ingredients
  

  • 4 nos Egg
  • Cup Drumstick leaves
  • 2 nos Tomato finely chopped
  • ½ cup Grated coconut
  • 2 nos Green chillies finely chopped
  • ½ cup Small onions finely chopped
  • 2 stalks Curry leaves
  • Ginger garlic paste – 1 tsp
  • 1 tsp Mustard seeds
  • 1 tsp Coriander powder
  • 1 tsp Turmeric powder
  • 3 tbsp Coconut oil – 2
  • Salt As reqd

Instructions
 

  • Beat eggs in a bowl with a little salt and set aside.
  • Wash and clean the drumstick leaves by removing the yellow ones and the thick stems.
  • Heat oil in a pan.
  • Splutter the mustard seeds.
  • Add ginger-garlic paste, green chillies, curry leaves and small onions and sautT.
  • When onions become transparent, add turmeric powder and coriander powder.
  • Add the chopped tomatoes and sautT for a while.
  • Add little water and salt and boil.
  • Add the drumstick leaves and keep stirring continously until the leaves are cooked.
  • Add the grated coconut and sautT for a few seconds.
  • Lower the heat and add the prepared eggs and scramble it until it¦s done to your liking.
  • :- You can serve Muringayila-Mutta Thoran as a starter and also along with rice.
