Ingredients
  

  • 1 no Carrot diced
  • Beans cut 1/2" long
  • 2 nos Potato diced
  • 1 no Capsicum diced
  • 1/2 cup Cauliflower florets
  • Boiled Green Peas 1/2 Cup
  • 1 no Tomato make puree of it
  • 1 cup Coconut milk
  • Cashewnuts Few
  • Raisins Few
  • Salt As reqd
  • 2 tbsp Oil

For Masala:-

  • 1/2" piece Ginger
  • 3 nos Garlic cloves
  • 5 nos Shallots Kunjulli
  • Garam masala As reqd
  • 1/2 tsp Kashmiri chilly powder
  • 1/2 tsp Turmeric powder
  • 2 tbsp Vegatable masala

Instructions
 

  • For preparing Kerala Mixed Vegetable Curry, first grind all the masala ingredients to a fine paste.
  • Cook vegetables.
  • Heat oil in a pan.
  • Saute the masala paste.
  • Add tomato puree, salt and cooked vegetables and cook again for 2 mins.
  • Add coconut milk.
  • :- Don`t let it boil after adding coconut milk. If you want to avoid coconut milk, you can use water to make gravy.
  • Garnish with coriander leaves, cashew nuts and raisins.
  • :- Serve hot with Chapathi, Roti or Naan.
