Goa Tasty Tomato Rice

Ingredients
  

  • 1 cup Basmati rice
  • 2 cups Water
  • 1 no Bay leaves Karuga/Vazhana ela
  • 1 small Cinnamon Karugapatta
  • 2 nos Cloves Grambu
  • 2 nos Cardamom Elakka
  • Cumin seeds A small pinch, Jeerakam
  • 1/2 no Onion
  • 1 no Tomato
  • 1/2 tsp Chilly powder
  • 1/2 tsp Garam masala
  • Salt As reqd
  • Coriander leaves
  • Oil

Instructions
 

  • Heat oil in a pan.
  • Add bay leaves, cumin seeds, cinnamon, cloves and cardamom and stir for a second.
  • Add onion and saute well.
  • When it becomes light brown in colour, add tomatoes and saute.
  • Add chilly powder, garam masala powder and salt and saute until the raw smell goes.
  • Add rice and mix well.
  • Add water and allow it to boil.
  • Garnish with coriander leaves.
