Kerala Style Vegetable Fried Rice

Kerala Style Vegetable Fried Rice is one of the easiest vegetarian dishes prepared with basmati rice and a choice of healthy vegetables. No soy sauce is used in Kerala Style Vegetable Fried Rice and hence different from Indo-Chinese dishes. The dish is unique and traditional with fried Basmati rice cooked with a variety of chopped veggies and garnished with aromatic ingredients. Kerala Style Vegetable Fried Rice is best enjoyed with Gobi Manchurian. Non-vegetarians can opt for chicken dishes or any other spicy gravy of your choice. Ingredients
  

  • 2 cups Basmati rice
  • Ghee/Butter to fry
  • Vegetables:
  • 1/4 cup Carrot, Beans, Green peas carrot & beans cut to 1/2 inch long pieces
  • 10 nos Raisins & Cashews
  • 1 tsp Garam masala
  • Ginger garlic paste – 1 tsp
  • 1/4 of Onion – 2 nos(chopped lengthwise large
  • 4 nos Green chillies – 3 chopped lengthwise
  • 1/2 tsp Lemon juice
  • Water to boil the rice
  • Coriander leaves Few, finely chopped
  • 3 tbsp Oil – 2
  • Salt As reqd

Instructions
 

  • For preparing Kerala Style Vegetable Fried Rice, first wash the rice and spread it out to let the water drain.
  • Pour ghee into a hot kadai.
  • Add ginger-garlic paste and rice and fry it. Keep the fried rice aside.
  • :- The mixture of ginger garlic and Basmati rice smells very good!
  • Add oil to a pan and fry 3/4 of the chopped onions and green chillies.
  • Add garam masala and vegetables also and stir fry.
  • Once they are half cooked, add the rice that was kept aside and add 2 cups of water.
  • Close the container and let the rice and vegetables cook together.
  • Heat some ghee in a kadai.
  • Fry the raisins and cashews and keep aside.
  • Fry the rest of the onions to crisp.
  • :- It will become dark brown in colour.
  • After the rice is cooked, pour lemon juice and mix.
  • Transfer the kerala style fried rice to a serving bowl and decorate with fried onions, raisins and cashews and the chopped coriander leaves on top.
  • :- Making Time of Kerala style vegetable fried rice : 25-30 mins.
  • :- Serve the vegetable fried rice with raitha, papad, and lemon pickle to vegetarians. Add with boiled egg or chicken curry for the non-vegetarians.
