Beans-Methi Fry

Beans fry using methi leaves and grated coconut

Ingredients
  

  • 1 lbs Beans or Chopped beans 4 cups
  • 1/2 cup Fenugreek leaves(chopped) Methi
  • Ginger garlic paste - 1 tsp
  • 1/4 tsp Turmeric powder
  • 2 tsp Red chilly powder
  • 1 tsp Salt
  • 1 tbsp Oil
  • 2 tbsp Grated coconut
  • 1 no Onion sliced, medium

For seasoning:

  • 10 leaves Curry leaves
  • 1 no Red chilly Kollamulaku
  • 1 tsp Mustard seeds
  • 1 tsp Black gram Uzhunnuparippu
  • 1 tsp Bengal gram Kadalaparippu
  • 1 tsp Cumin seeds Jeerakam
  • 4 nos Green chillies

Instructions
 

  • Boil 4 cups of chopped beans in little water with 1/2 a tsp of salt for about 15 mins or so or until tender on medium flame.
  • Strain them and keep aside.
  • Heat a tbsp of oil in a pan.
  • Add all the seasoning ingredients(channa dal, urad dal, mustard, cumin, red chillies and finely chopped green chillies) and saute for a while for about 3/4th minute.
  • Add turmeric, ginger-garlic paste, chilly powder, methi leaves, sliced onions, salt and saute for 4 - 5 mins until the raw smell of methi leaves and onion vanishes and a nice aroma of methi leaves comes.
  • Now at this stage, add the boiled and strained beans.
  • Mix them well and saute for 3 - 4 mins.
  • Cover and cook on low flame for 3 - 4 mins.
  • :- Adjust the salt level.
  • Add the grated coconut and finally switch off the stove.
