Cabbage-Carrot Curry

Easy and quick Cabbage curry with grated carrot and coconut(thoran)

Ingredients
  

  • 1 lb Cabbage
  • or
  • 4 cups Cabbage finely chopped
  • 1/2 cup Carrot grated
  • 4 nos Green chillies
  • Salt As reqd
  • 1/2" piece Ginger
  • 1 no Onion medium
  • 1/4 cup Coconut grated
  • Coriander leaves A bunch
  • 1/4 tsp Turmeric powder
  • 1 tbsp Oil

For seasoning:-

  • 1 tsp Mustard seeds
  • 1 tsp Cumin seeds Jeerakam
  • 1 - Curry leaves

Instructions
 

  • Clean the cabbage and cut the cabbage into very thinly as possible.
  • Finely chop green chillies and ginger.
  • Heat oil in a nonstick pan.
  • Add mustard seeds, cumin seeds, curry leaves and turmeric and saute for 30 seconds.
  • Add chopped ginger, green chillies, sliced onions and saute for 1 minute.
  • Add grated carrot, salt and finely cut cabbage and stir it well to mix with the seasoning.
  • Cover the pan with a lid for 4 - 5 mins and cook on medium flame.
  • Remove the lid and stir once again.
  • Add grated coconut and cover cook for 2 more mins.
  • Switch off the flame.
  • Garnish with chopped coriander and leave the curry covered for 5 - 1 mins.
  • :- Please follow the timings mentioned exactly as mentioned in this recipe. You will get a wonderfull taste. If overcooked or oversteamed the curry leaves rotten smell. :- Do cook it on medium flame or else the cabbage will be burnt and the flavour changes.
