Slice the vegetables into small cubes.
Make separate pastes of onion & tomato.
Take about 50 gm of cashew and soak in water for 30 mins.
Saute sliced onion in a pan. Add 1/4 tsp turmeric, 1/2 chilly powder & 1/4 tsp pepper powder and saute it.
Grind this sauted onion with the soaked cashews.
Fry the paneer cubes in butter.
Saute ginger-garlic paste in butter followed by onion paste and tomato puree.
Add turmeric powder,chilly powder and garam masala powder.Saute it for 2 min.
Add the vegetables and paneer.
Cook till they are done.
Add the ground cashew-onion paste and saute it till oil appears.
Add salt to taste.Also add a pinch of sugar.
Garnish with coriander leaves.
:- You can also garnish with fresh cream to add extra taste.
