For preparing Egg Fried Rice, first cook the rice with 2 cups of water, pinch of salt and 1 tsp of oil till done.
:- Rice is done when can be pressed by hand and mashed.
Heat 1/4 cup of oil in pan.
Mix eggs and beat them with a pinch of salt and ground pepper.
Add the eggs to the pan and scramble it lightly.
Remove the eggs from the pan and add the rest of the oil to the pan.
When oil gets hot, add ginger and chillies into the pan.
Stir it in pan for 1 - 2 mins.
Add green beans, carrots n capsicum and stir for another minute.
Sprinkle a little water into the pan and cover for 1 minute.
Add green onions to the pan and stir for 2 mins.
Add salt and half of the pepper powder and mix well.
Add the cooked rice to the pan and stir for another 1 min.
Add rest of the pepper powder and some salt if needed to the rice and mix well for 2 more mins.
Add soy sauce to the rice and mix well for 2 more mins.
Add the scrambled eggs to the rice and take the pan off the heat.
Mix the eggs well in the rice till evenly distributed around the rice.
:- Serve hot with Chili garlic sauce or Chicken/Veg machurian.
:- Always keep the heat under the pan between medium and high while cooking the rice. Also woks work best for cooking if not use a big size pot so mixing is easy.
