Coconut Milk Rasam

Ingredients
  

  • 4 cups Coconut milk diluted
  • 2 - Tomatoes
  • 1 - Red chilly powder
  • 1 tsp Mustard seeds
  • 1 sprig Curry leaves
  • 3 - Rasam powder
  • 1/2 cup Coriander leaves
  • Salt As reqd
  • 1 - Oil

Instructions
 

  • Mince the tomatoes and keep aside.
  • Heat some oil in a pan or a kadai.
  • Splutter mustard seeds and then add curry leaves.
  • Add the minced tomatoes and saute it for some time till they are a soft and mushy.
  • Add diluted coconut milk and heat it, stirring it occasionally.
  • Add the rasam powder and chilly powder and stir it.
  • Let it boil and make sure it doesnt split.
  • Add the coriander leaves and let it continue boiling.
  • Take it off the stove and then add salt to taste.
  • :- You can adjust the rasam powder according to the spiciness of the powder that you are using.
  • :- Serve with steaming white rice or ghee rice.
