Coconut Milk Rasam Easy and tasty to make 4 cups Coconut milk (diluted)2 - Tomatoes1 - Red chilly powder1 tsp Mustard seeds1 sprig Curry leaves3 - Rasam powder1/2 cup Coriander leavesSalt (As reqd)1 - Oil Mince the tomatoes and keep aside.Heat some oil in a pan or a kadai.Splutter mustard seeds and then add curry leaves.Add the minced tomatoes and saute it for some time till they are a soft and mushy.Add diluted coconut milk and heat it, stirring it occasionally.Add the rasam powder and chilly powder and stir it.Let it boil and make sure it doesnt split.Add the coriander leaves and let it continue boiling.Take it off the stove and then add salt to taste.:- You can adjust the rasam powder according to the spiciness of the powder that you are using.:- Serve with steaming white rice or ghee rice.
