Scrambled Egg With Vegetables Egg with vegetables and garlic 2 nos Eggs2 - Garlic pods (big)2 nos Carrots (medium)2 nos Potato (medium)1 no Capsicum (medium)2 tsp Crushed red chillies1 tsp OilSalt (As reqd)4 - Coriander leaves Heat some oil in a pan.Add the sliced garlic or garlic paste when the oil is warm.:- All the vegetables should be cut into small pieces like you would for a cutlet. Add crushed red pepper.Add carrots followed by salt and then let the carrots cook without water.After some time, add the cut capsicum and potato and leave it aside.:- This itself is a dish(Veggie dish).Heat some oil in another pan.Add the vegetables and coriander leaves and the eggs with a little salt and mix them as you would for making scrambled eggs.:- Serve hot with rice or with ghee rice.
