Mango-Carrot Pickle

Instant pickle with mango and carrot

Ingredients
  

  • 2 cups Raw mango cut into 1" long thin pieces
  • 1 cup Carrot 2 cups needed if the mango is too sour, cut into 1" long thin pieces
  • 1/2 cup Green chillies(split) medium
  • 2 tbsp Ginger finely chopped
  • 3 stems Curry leaves
  • 1 tsp Fenugreek Uluva
  • 1 tsp Mustard seeds
  • Salt As reqd
  • 1 tbsp Gingelly oil

Instructions
 

  • Mix the carrot, mango and salt together.
  • Heat the oil in a pan or a kadai.
  • Splutter mustard seeds and add fenugreek.
  • Add the other ingredients and saute.
  • Add this to the carrot mango mixture and mix well.
  • :- This will not stay more than a week even if u refrigerate.
