Mango-Carrot Pickle
Instant pickle with
mango
and
carrot

Ingredients
1x

cups
Raw
mango
cut into 1" long thin pieces
1
cup
Carrot
2 cups needed if the
mango
is too sour, cut into 1" long thin pieces
1/2
cup
Green chillies
(split)
medium
2
tbsp
Ginger
finely chopped
3
stems
Curry leaves
1
tsp
Fenugreek
Uluva
1
tsp
Mustard seeds
Salt
As reqd
1
tbsp
Gingelly oil
Instructions
Mix the
carrot
,
mango
and
salt
together.
Heat the
oil
in a pan or a kadai.
Splutter
mustard seeds
and add fenugreek.
Add the other ingredients and saute.
Add this to the
carrot
mango
mixture and mix well.
:- This will not stay more than a week even if u refrigerate.
