Kerala Vegetable Kuruma

Easy to make kuruma with vegetables and milk

Ingredients
  

  • 1 no Potato diced, big
  • 2 nos Carrots diced
  • 5 Beans
  • 1 no Cauliflower small
  • ½ cup Green peas
  • 2 nos Onion sliced thinly
  • 6 nos Green chillies – 5 slit
  • Ginger A small piece
  • 8 nos Garlic pods – 7
  • ½ tsp Turmeric powder
  • 1 tbsp Coriander powder
  • 1 ½ Garam masala powder
  • 25 gm Cashewnuts soaked in water
  • 1 cup Milk
  • Oil As reqd
  • Salt As reqd
  • Coriander leaves for garnishing

Instructions
 

  • Cook all the vegetables in water along with salt, till done.
  • Heat oil in a pan or a kadai.
  • Add onion and green chillies and sautT.
  • Add ginger-garlic paste and sautT again.
  • Add turmeric powder and garam masala powder and sautT again.
  • Allow this mixture to cool.
  • Grind it in a mixer grinder into a smooth paste.
  • Add this mixture into the pan containing cooked vegetables.
  • Mix well the vegetables with the paste.
  • Add the cashew paste and stir well.
  • When it starts to thicken, add milk and mix well.
  • Adjust the level of salt.
  • Add coriander leaves and remove from the flame.
