For preparing Beans Thoran - Kerala Style, first chop finely the beans, onions and green chillies.
Mix together the above chopped items, grated coconut, salt and turmeric powder.
:- Mix using your hands for best results.
Heat oil in a pan or a kadai.
Splutter mustard seeds and saute red chillies and curry leaves.
Add the beans-coconut mixture and mix well.
Sprinkle a little water and cover the pan with its lid.
Simmer for 5 mins. Beans thoran dish should not be overcooked. Overcooking destroys the appeal and flavor of the dish.
Remove the cover and mix well the whole contents again.
Keep it on flame till beans thoran is done.
