Navarathna Curry

Mixture of variety of items in a single dish

Ingredients
  

  • 100 gm Beans
  • 100 gm Carrots
  • 100 gm Potatoes
  • 100 gm Cauliflower
  • 100 gm Capsicum
  • 100 gm Paneer
  • 100 gm Cashewnuts
  • 100 gm Raisins Onakkamunthiri
  • 100 gm Green peas
  • 2 nos Tomatoes
  • 1 teacup Curd
  • 4 tbsp Ghee
  • Ghee for frying
  • Salt As reqd
  • Sugar As reqd

For grinding:-

  • 6 nos Garlic pods
  • 2 nos Green chillies
  • 4 nos Kashmiri chillies
  • 1" piece Ginger
  • 2 tsp Coriander seeds
  • 1 tsp Cumin seeds Jeerakam
  • 1 tsp Shah jeera Sheemajeerakam
  • 3 nos Cardamom Elakka

Instructions
 

  • Cut the beans, carrots and potatoes into small cubes.
  • Cut the cauliflower into big pieces.
  • Boil the beans, carrots, cauliflower and green peas.
  • Deep fry the potatoes in ghee.
  • Cut the paneer into small cubes and fry it in ghee.
  • Cut the capsicum into long strips.
  • Grind the tomatoes with very little water.
  • Whip the curds.
  • Grind together the items for grinding into a fine paste.
  • Heat the ghee in a vessel and fry the paste for a while.
  • Add the ground tomatoes and curd and fry again for a few mins.
  • Add the boiled vegetables, cashews, raisins, paneer pieces, salt and sugar and cook for few mins.
  • Garnish with pineapple, silver foil and cherries.
  • :- Serve with rotis & chappathis or even with rice.
