Beat the eggs with salt and a pinch of turmeric powder.
Mash together coconut, garlic pods, half of chopped onions, half of chopped green chillies and curry leaves.
Heat oil in a fry pan.
Splutter mustard seeds.
Add dry chillies, black gram, cumin seeds and curry leaves.
Add the rest of the onions and green chillies and saute, till the onion turns golden.
Add carrots and saute for 2 mins.
Add beans and saute for 1 min.
Add cabbage followed by salt to taste and turmeric powder and mix well.
When they are almost cooked, add beaten eggs and saute well, till all the vegetables turn separate.
Add mashed coconut and saute.
:- Serve hot.
