Egg Thoran Easy

Fried egg with mixed vegetables and coconut

Ingredients
  

  • 3 nos Eggs
  • 1/4 tsp Turmeric powder
  • Salt As reqd
  • 1 no Onion finely chopped
  • 2 nos Green chillies finely chopped
  • 2 nos Carrot finely chopped
  • 6 nos Beans finely chopped
  • 1/2 cup Cabbage finely chopped
  • 1/2 cup Grated coconut
  • 7 - Garlic pods
  • 7 nos Curry leaves

For seasoning:-

  • 3 tsp Oil
  • 1 tsp Mustard seeds
  • 1/2 tsp Cumin seeds Jeerakam
  • 2 nos Dry chillies Kollamulaku
  • 6 nos Curry leaves
  • 1 tsp Black gram Uzhunnuparippu

Instructions
 

  • Beat the eggs with salt and a pinch of turmeric powder.
  • Mash together coconut, garlic pods, half of chopped onions, half of chopped green chillies and curry leaves.
  • Heat oil in a fry pan.
  • Splutter mustard seeds.
  • Add dry chillies, black gram, cumin seeds and curry leaves.
  • Add the rest of the onions and green chillies and saute, till the onion turns golden.
  • Add carrots and saute for 2 mins.
  • Add beans and saute for 1 min.
  • Add cabbage followed by salt to taste and turmeric powder and mix well.
  • When they are almost cooked, add beaten eggs and saute well, till all the vegetables turn separate.
  • Add mashed coconut and saute.
  • :- Serve hot.
  • :- All vegetables which we use to make thoran can be used in egg thoran also.
