Egg Thoran Easy Fried egg with mixed vegetables and coconut 3 nos Eggs1/4 tsp Turmeric powderSalt (As reqd)1 no Onion (finely chopped)2 nos Green chillies (finely chopped)2 nos Carrot (finely chopped)6 nos Beans (finely chopped)1/2 cup Cabbage (finely chopped)1/2 cup Grated coconut7 - Garlic pods7 nos Curry leavesFor seasoning:-3 tsp Oil1 tsp Mustard seeds1/2 tsp Cumin seeds (Jeerakam)2 nos Dry chillies (Kollamulaku)6 nos Curry leaves1 tsp Black gram (Uzhunnuparippu) Beat the eggs with salt and a pinch of turmeric powder.Mash together coconut, garlic pods, half of chopped onions, half of chopped green chillies and curry leaves.Heat oil in a fry pan.Splutter mustard seeds.Add dry chillies, black gram, cumin seeds and curry leaves.Add the rest of the onions and green chillies and saute, till the onion turns golden.Add carrots and saute for 2 mins. Add beans and saute for 1 min.Add cabbage followed by salt to taste and turmeric powder and mix well.When they are almost cooked, add beaten eggs and saute well, till all the vegetables turn separate.Add mashed coconut and saute.:- Serve hot.:- All vegetables which we use to make thoran can be used in egg thoran also.
