Pumpkin-Khaju(Cashew Nuts) Fry

Cashew and Pumpkin(Mathanga) fry

Ingredients
  

  • 500 gm Pumpkin skinned and deseeded, Mathanga
  • Cashewnuts A handful
  • 1/2 tbsp Oil
  • 1 tsp Mustard seeds
  • 1 tsp Cumin seeds Jeerakam
  • 3 - Garlic pods minced
  • Coriander
  • Curry leaves A few
  • 3 - Red chillies Kollamulaku
  • 1 tsp Turmeric powder
  • 1 - Chilly powder
  • 1/2 cup Milk
  • Salt As reqd

Instructions
 

  • Grate the pumpkin and keep it aside.
  • Heat oil in a pan or a kadai.
  • Splutter mustard seeds and cumin seeds.
  • Add curry leaves, minced garlic, red chillies, coriander and cashewnuts and saute for few minutes, till the nuts are slightly brown.
  • Add the grated pumpkin and saute for 5 mins.
  • Once the oil starts to leave, add turmeric powder, chilly powder and milk.
  • Simmer it covered with a lid for 10 mins, until the water is fully dried up.
  • Add salt and fry for 1 - 2 mins.
  • :- Serve with both rotis and rice.
