Ingredients
  

  • 2 cups Grated carrot
  • 1 cup Dates chopped
  • 1 cup Cashewnuts chopped
  • 2 cups Sugar powdered
  • 3 nos Eggs white & yolk separated
  • 2 cups All purpose flour Maida
  • 1 1/2 cups Refined oil
  • Vanilla essence A few drops
  • 1 tsp Baking powder
  • 1 tsp Soda bicarbonate
  • 1 tsp Spices powdered
  • Honey As reqd

Instructions
 

  • Preheat the oven to 200 degree cen 375 degree f or Gas Mark 5.
  • Sieve flour together with baking powder and soda bicarbonate thrice.
  • Mix and beat well the powdered sugar and oil.
  • Add egg yolks and beat for 2 mins.
  • Add all the dry ingredients.
  • Pour in honey.
  • Add vanilla essence.
  • Beat the egg whites lightly stiff and fold into carrot mixture.
  • Place in a greased tray dusted 8 cups capacity.
  • Bake for 1 1/2 hrs.
  • Remove from the oven and cool in the tin.
  • Turn it over to a cooling rack.
