Goa Cuisine Tomato Rice

Ingredients
  

  • 2 - Cooked rice
  • 2 nos Onions finely sliced, small
  • 3 nos Tomato medium
  • 3 nos Green chillies slit
  • Ginger garlic paste - 1 tsp
  • 1/2 tsp Turmeric powder
  • 1 tsp Chilly powder
  • 1/2 tsp Cumin seeds Jeerakam
  • Mustard seeds A little
  • 1 - Oil
  • Salt As reqd
  • 1 no Lime
  • Coriander leaves for garnishing

Instructions
 

  • Heat oil in a deep vessel.
  • Splutter cumin seeds and mustard seeds.
  • Add onions and fry, till till they turn golden in colour.
  • Add tomatoes and let it cook well, till they get mashed well.
  • Add turmeric powder, ginger-garlic paste, red chilly powder and salt and let it fry for sometime.
  • Add the rice and keep tossing, till the mixture is spread to all the rice.
  • Remove from fire.
  • Garnish with coriander leaves and a squeeze a lime over it.
  • :- Serve hot.
