Brinjal Curry - Andra Style

Brinjal(Vazhuthananga) curry - Brinjal curry - Andra Style

Ingredients
  

  • 8 nos Brinjal Vazhuthananga
  • 4 tbsp Bengal gram Kadalaprippu
  • 2 tbsp Black gram Uzhunnuparippu
  • 1 tbsp Coriander seeds
  • 1/2 tbsp Cumin seeds Jeerakam
  • 4 nos Red chillies Kollamulaku
  • 2 nos Onion cut into small pieces, big
  • 1/2 tbsp Red chilly powder
  • Sugar A pinch
  • 1 tbsp Coriander powder
  • Salt As reqd
  • 5 tbsp Oil
  • Coriander leaves for garnishing

Instructions
 

  • Heat 2 tbsp of oil in a pan or a kadai.
  • Add Bengal gram, black gram, cumin seeds, coriander seeds and red chillies and fry, till it smells good.
  • Allow them to cool and grind them to a fine powder.
  • Add a onion and grind them again into a fine paste.
  • Heat 3 tbsp of ool in the same pan.
  • Add the remaining onion and fry, till they become golden brown.
  • Add the paste to the fried onions and saute.
  • Add some water along with all the powders and cook for 5 mins.
  • Take the brinjals and cut into four parts. Do not cut the topmost portion. Leave it as it is.
  • Put the paste in the middle of the brinjal and fry it for 7 mins.
  • Add remaining paste, if left.
  • Garnish with coriander leaves.
  • :- Serve hot with White Rice.
