Mango Rice

Instant rice dish with mango for mango lovers

Ingredients
  

  • 2 cups Rice cooked adding salt while being cooked
  • 3 tbsp Grated coconut
  • Grated mango ¾ cup, raw
  • 2 tbsp Ghee
  • 1 tsp Mustard seeds
  • 3 nos Dried red chilly – 2 Kollamulaku
  • 3 nos Green chillies finely cut
  • 3 nos Small Onions(finely cut) Kunjulli
  • Curry leaves I sprig
  • 1 tsp Salt
  • 1 tsp Turmeric powder
  • 12 nos Cashewnuts cut in small pieces
  • 20 nos Raisins optional, Onakka munthiri
  • Ghee for frying cashews and raisins

Instructions
 

  • Mix the cooked rice with the grated mango and salt and keep aside for 15 minutes.
  • Heat ghee in a large pan over medium heat.
  • Add mustard seeds, 2 red dried chillies broken into halves.
  • Add green chillies and onions. Stir for few seconds.
  • Add curry leaves, a pinch of salt and a pinch of turmeric powder. Switch off the flame.
  • Add rice and saute for 2 minutes with the same remaining heat. 7)Fry the cashews and raisins in ghee.
  • Sprinkle grated coconut, fried cashews and raisins onto the rice.
  • Switch on the gas to low flame and slightly stir for another 3 minutes to mix all the ingredients well.
  • :- Serve hot.
