Olan In Coconut Milk

Olan is a mild, light flavored curry with the flavors of coconut milk, red gram, pumpkin. Olan is a traditional Kerala side dish which is regular at every Onamsadya.It's a mild stew that is delicately spiced with green chillies, flavored with curry leaves and coconut milk. This dish is very subtle in flavor and avoids the use of any spices or masala. The mildly sweet coconut milk, crushed curry leaves and aromatic coconut oil gives this dish a spectacular clean fresh flavor.

Ingredients
  

  • 100 gm Ash gourd peeled and cut into small pieces, Kumbalanga
  • 100 gm Pumpkin peeled and cut into small pieces, Mathanga
  • 4 nos Green chillies split the edges
  • 1 tbsp Red gram soaked in the water for about 6 hours, Thuvaraparippu
  • 1/2 of Coconut grated
  • Salt As reqd
  • 1 tbsp Coconut oil
  • 1 spring Curry leaves

Instructions
 

  • Cook the vegetables and red gram dal in water along with salt and green chillies.
  • Squeeze the grated coconut and prepare 1/4 cup of thick coconut milk and 1 cup of thin coconut milk.
  • When the vegetables are cooked, add thin coconut milk.
  • Bring it to a boil.
  • When it thickens well, add thick coconut milk.
  • Bring it to a boil and remove from flame.
  • Add coconut oil and curry leaves and mix well.
