Kerala Easy Egg Masala
Easy, Simple and Tasty Egg Masala

- 3 nos Eggs
- 1 no Onion big
- 1 tsp Ginger paste
- ½ tsp Pepper powder
- 1 tsp Chilly powder
- ¼ tsp Tumeric powder
- Curry leaves A few
- ½ of Tomato
- 2 tbsp Oil
- 1 tsp Mustard seeds
- ½ tsp Aniseeds Perinjeerakam
- Salt As reqd
Boil eggs, remove the shells and cut into two halves and keep aside.
Heat oil in a pan.
Splutter mustard seeds.
Add aniseeds.
Add onions and curry leaves and saute well for sometime.
Add pepper.
Add ginger paste and saute, till the oil clears.
Add chilly powder and turmeric powder and mix well.
Add tomato and saute for about 5 mins.
Add the eggs.
Add 1/2 - 1 cup of water and salt to taste.
Simmer and cook, until it boils.
:- Serve with chappathis.
