Lady`s Finger Gravy

Fried lady`s finger(Vendakka) in coconut milk

Ingredients
  

  • 15 nos Lady`s finger Vendakka
  • 1/2 tsp Turmeric powder
  • 1/2 tsp Coriander powder
  • 1/4 tsp Chilly powder
  • Salt As reqd
  • 2 nos Onion sliced
  • 1 no Tomato sliced
  • Curry leaves A few
  • 1/4 tsp Garam masala powder
  • 1/4 cup Thick coconut milk

Instructions
 

  • Clean the lady`s finger well.
  • Remove both their ends.
  • Slit open horizontally, leaving its upper portion unslit.
  • Mix together turmeric powder, coriander powder, chilly powder and salt.
  • Rub the above mixture into the opened portions of the lady`s finger.
  • Heat coconut oil in a pan.
  • Fry the above lady`s fingers in it and keep them aside.
  • Heat up the remaining oil in the pan.
  • Add onions and saute them.
  • Add tomatoes and saute well.
  • Add the balance mixture of turmeric, coriander and chilly powders, if any left.
  • Add garam masala powder and saute, until the raw smell of masala leaves.
  • Add curry leaves.
  • Add the fried lady`s fingers.
  • Add coconut milk and allow it to boil for 5 mins.
