For preparing Savoury Puri, mix together maida flour with all other ingredients except ghee and oil.
Gradually rub in ghee to the mixture till it is evenly distributed.
Add enough water to make a firm but pliable dough and knead for a minute or two.
Cover in clingwrap and rest for an hour.
Roll out on a floured surface to round puris with normal thickness.
Heat oil in a pan, till it is fairly hot.
Once oil is ready, fry the pooris turning both sides till golden brown and crisp.
Repeat the process, using all the dough.
Place fried pooris on an absorbent paper to soak up excess oil and cool completely.
