Heat 1 tsp of butter in a pan.
Saute carrot, cabbage, capsicum, onion and green peas along with salt and 1 tsp of pepper.
When it is almost cooked, add the beaten egg into it and stir, till egg is cooked.
Add chicken cubes and saute for about 2 - 3 mins. Keep this aside.
Add 3 tsp of butter into the pan.
Add the cold rice into it.
Pour soy sauce into it and stir for 2 - 3 mins.
Add 1 tsp of pepper and fry for about 5 - 10 mins.
Stir occasionally.
Add the sauteed egg chicken mixture and stir for 2 mins.
:- You can add some garam masala and pineapple essence for fragrance.. I know garam masala is not added in fried rice, but a pinch of it gives an excellent fragrance without altering taste. Cooking is always experimenting.
