Easy Fried Rice

Ingredients
  

  • 4 cups Cooked Basmati/Long grain/Jasmine rice Refrigerate rice for one day for better results.
  • 1 no. Carrot Cut into small cubes, big
  • 1 1/2 cups Cabbage Finely chopped
  • 1 1/2 cups Capsicum Finely chopped
  • 1/2 cup Green peas
  • 1/2 cup Onion Finely chopped
  • 2 nos. Eggs
  • 2 cups Cooked chicken Small cubes
  • 2 tsp Pepper powder
  • 5 tsp Chilly soy sauce
  • 4 tsp Butter
  • Salt As reqd

Instructions
 

  • Heat 1 tsp of butter in a pan.
  • Saute carrot, cabbage, capsicum, onion and green peas along with salt and 1 tsp of pepper.
  • When it is almost cooked, add the beaten egg into it and stir, till egg is cooked.
  • Add chicken cubes and saute for about 2 - 3 mins. Keep this aside.
  • Add 3 tsp of butter into the pan.
  • Add the cold rice into it.
  • Pour soy sauce into it and stir for 2 - 3 mins.
  • Add 1 tsp of pepper and fry for about 5 - 10 mins.
  • Stir occasionally.
  • Add the sauteed egg chicken mixture and stir for 2 mins.
  • :- You can add some garam masala and pineapple essence for fragrance.. I know garam masala is not added in fried rice, but a pinch of it gives an excellent fragrance without altering taste. Cooking is always experimenting.

    The recipe was very good. I tried egg fried rice. This was the first time the rice was separate from egg and vegetables. Though it was made at home, it was resembling the restaurant style. Thanks.

    I tried this with prawns instead of chicken minus veggies and onion… it just happened that prawns were available in my fridge and the mentioned veggies were not there when I saw this recipe. I am not a good cook at all, still the fried rice came out really well. Feels so good when I think that this yummy dish is actually made by me!! Thank you very much for posting this…
