Coconut Lobster Curry

Lobster(Konju) curry made with coconut milk

Ingredients
  

  • 4 nos Lobsters(Konju) cracked, small
  • 2 tbsp Coconut oil
  • 2 nos Onions finely sliced
  • 6 nos Green chillies slit lengthwise
  • 3 nos Garlic pods sliced into fine strips
  • 20 nos Curry leaves
  • 1 1/2 tsp Turmeric powder
  • 1 1/2 tsp Salt
  • 2 1/2 cups Coconut milk
  • Coriander leaves for garnishing

Instructions
 

  • Heat oil in a wide pan.
  • SautT the onion, chillies and garlic.
  • Add 10 curry leaves.
  • When the onions turn translucent, add turmeric powder and salt.
  • Add coconut milk and heat through.
  • Add lobsters and simmer gently.
  • Fry remaining 10 curry leaves in a separate pan.
  • :- Lobsters should be cooked in 7 - 9 minutes, depending on size.
  • Garnish with fried curry leaves and coriander leaves.
  • :- Serve in deep dish laden with their sauce with steamed rice alongside.
