Preparation Method of Brinjal Curry:
Cut brinjal into thin round pieces, each piece about 1 cm thick.
Mix together turmeric powder, 1/2 tsp of chilly powder, salt and a little water to make a paste.
Apply the paste on brinjal pieces and keep it for 10 mins.
Heat 3 tbsp of oil in a pan or a kadai.
Fry the marinated brinjal pieces, until it turns brown.
Heat 1 tbsp of oil in a pan.
Fry chopped garlic, until it turns brown.
Add grated coconut , fenugreek, curry leaves, remaining chilly powder, coriander powder and a pinch of pepper.
Take the mix out of pan and grind it well.
Mix tamarind paste with a little water and add to the fried brinjal pieces.
Cook for 5 mins on a medium heat.
Add the ground mix and saute well.
Add coconut milk.
Add salt and mix well.
Cook on a medium flame for another 10 mins.
Remove Brinjal curry from flame.
Add 1 tbsp of coconut oil and curry leaves to the Brinjal curry.
