Potatoes cooked in coconut milk

Ingredients
  

  • 2 nos Potato boiled and mashed
  • Thick coconut milk As reqd
  • Thin coconut milk As reqd
  • 2 nos Green chillies
  • Garam masala powder A pinch
  • 1/4 tsp Pepper powder
  • Salt As reqd
  • 1 tsp Coconut oil
  • Curry leaves A few
  • 1/2 tsp Mustard seeds
  • 5 nos Pearl onions cut into pieces, Kunjulli
  • 1/2 tsp Cumin seeds Jeerakam

Instructions
 

  • Heat oil in a pan or a kadai.
  • Splutter mustard seeds.
  • Add cumin seeds, chopped small onions, green chillies and curry leaves.
  • When the onions turn golden brown, add the mashed potatoes.
  • Add the second extract or thin coconut milk.
  • Add a pinch of garam masala powder and salt.
  • Allow it to boil.
  • When it starts to boil, add the first extract or the thick coconut milk.
  • Before it starts to boil, switch off the flame.
  • Sprinkle some pepper powder and mix well.
  • :- Serve with vellayappams.
