Real Vegetable Biriyani

Ingredients
  

  • 2 cups Basmati Rice
  • 3 cups Water
  • 1/2 cup Onion chopped
  • 1/2 cup Tomatoes chopped
  • 4 nos Carrots
  • 250 gm Beans
  • 1/2 cup Green peas
  • Cauliflower florets As reqd
  • 6 nos Garlic cloves
  • 1" piece Ginger
  • 10 nos Cloves Grambu
  • 6 sticks Cinnamon Karugapatta
  • 1 tbsp Aniseeds Perinjeerakam
  • 1 tsp Coriander seeds
  • 1 tbsp Coconut
  • 3 nos Red chillies Kollamulaku
  • Bay leaf(Vazhana/Karuga ela)
  • 5 nos Cardamom Elakka
  • 2 tbsp Salt
  • 8 tbsp Oil
  • 1 - Ghee

Instructions
 

  • For preparing Real Vegetable Biriyani, first soak rice in water for 10 mins.
  • Fry rice in ghee for few minutes and keep it aside.
  • Grind together garlic, ginger, 6 cloves, 3 cinnamon sticks, 3 red chillies, aniseeds, coriander seeds and coconut to a fine paste.
  • Heat oil in a pressure pan.
  • Add remaining cinnamon, cloves, bay leaf and cardamoms.
  • Add onions followed by tomatoes and vegetables and fry for 2 mins.
  • Add ground paste and saute, till the raw smell of garlic-ginger leaves.
  • Add rice and water.
  • Wait till the water boils and then close the cooker and keep the stove in sim and wait for two whistles.
  • :- Serve Real Vegetable Biriyani with curd raitha.
