Olan Curry Using Kumbalanga

Kerala style curry using Kumbalanga

Ingredients
  

  • 1/2 kg Kumbalanga finely sliced
  • 5 - Green chillies slit
  • Salt As reqd
  • 1 cup Thick coconut milk 1st extract
  • 1 1/2 cups Thin coconut milk 2nd extract
  • 1 tsp Mustard seeds
  • Curry leaves
  • 2 tsp Oil

Instructions
 

  • Mix together kumbalanga, green chillies and salt along with second extract of coconut milk and cook well.
  • When it comes to a boil, add the first extract of coconut milk and boil for 3-5 minutes.
  • Heat oil in a pan.
  • Add mustard seeds and when they crackle, add curry leaves.
  • Add the above seasoning into the boiling curry.
  • Simmer for 1 or 2 minutes and remove from heat.
  • :- You can add chilly powder(1/2 tsp) instead of green chillies and also turmeric to get another version.This has to be done while first stage of cooking, that is before adding second extract of coconut milk.
