Olan Curry Using Kumbalanga Kerala style curry using Kumbalanga 1/2 kg Kumbalanga (finely sliced)5 - Green chillies (slit)Salt (As reqd)1 cup Thick coconut milk (1st extract)1 1/2 cups Thin coconut milk (2nd extract)1 tsp Mustard seedsCurry leaves2 tsp Oil Mix together kumbalanga, green chillies and salt along with second extract of coconut milk and cook well.When it comes to a boil, add the first extract of coconut milk and boil for 3-5 minutes.Heat oil in a pan.Add mustard seeds and when they crackle, add curry leaves.Add the above seasoning into the boiling curry.Simmer for 1 or 2 minutes and remove from heat.:- You can add chilly powder(1/2 tsp) instead of green chillies and also turmeric to get another version.This has to be done while first stage of cooking, that is before adding second extract of coconut milk.
