Tamil Nadu Yummy Vegetable Biriyani

A mix of veggies, mint, coriander and lemon juice

Ingredients
  

  • 1 cup Basmati rice
  • 2 cups Vegetables Carrots, Beans, Green peas, Cauliflower
  • 1 no Onion
  • 1 no Tomato
  • 1 tbsp Yoghurt/Curd
  • 1 tsp Lemon juice
  • Bay leaves(Vazhana/Karuga ela)
  • Cinnamon(Karugapatta)
  • Cumin seeds(Jeerakam)
  • Cloves(Grambu)
  • Oil

For masala:

  • 1/2 " Ginger
  • 5 - Garlic pods
  • 1 - Green chillies
  • 1/2 bunch Coriander leaves
  • 1/2 bunch Mint leaves Pudhina

Instructions
 

  • Heat oil in a pressure pan.
  • Add all the spices, sliced onion and the ground masala.
  • When it turns colour, add tomato.
  • Add rice and fry.
  • Add all vegetables to it along with yoghurt, lemon juice and salt.
  • Add enough water and check the level of salt.
  • Close the lid and pressure cook it, till you hear 1 whistle.
  • :- Serve with Raita or a Kuruma.
