Tamil Nadu Yummy Vegetable Biriyani
A mix of veggies, mint, coriander and lemon juice

- 1 cup Basmati rice
- 2 cups Vegetables Carrots, Beans, Green peas, Cauliflower
- 1 no Onion
- 1 no Tomato
- 1 tbsp Yoghurt/Curd
- 1 tsp Lemon juice
- Bay leaves(Vazhana/Karuga ela)
- Cinnamon(Karugapatta)
- Cumin seeds(Jeerakam)
- Cloves(Grambu)
- Oil
For masala:
- 1/2 " Ginger
- 5 - Garlic pods
- 1 - Green chillies
- 1/2 bunch Coriander leaves
- 1/2 bunch Mint leaves Pudhina
Heat oil in a pressure pan.
Add all the spices, sliced onion and the ground masala.
When it turns colour, add tomato.
Add rice and fry.
Add all vegetables to it along with yoghurt, lemon juice and salt.
Add enough water and check the level of salt.
Close the lid and pressure cook it, till you hear 1 whistle.
:- Serve with Raita or a Kuruma.
