For making egg noodles:
1)With 13 cups of water, cook the noodles on a high flame.
Add salt into it.
Boil, until 75% is cooked.
Drain and add 1 tbsp of oil.
Cool it and mix the corn flour.
Heat the oil very well in a pan and deep fry the noodles. Turn over the noodles, until it is light brown.
Remove and drain it.
For making Chopsuey:
1)Heat 3 tbsp oil in a pan.
Stir fry the garlic, ginger and spring onions for 5 seconds.
Add chicken and stir fry for 2 rninutes.
Add the vegetables and stir fry for 2 more min.
Add stock, seasonings and corn flour mixed with water and boil, till it thickens.
Remove from heat.
Heat the remaining 3 tbsp of oil in another pan.
Add the cooked noodles and stir and mix for 5 minutes.
Transfer the noodles to a serving plate and pour the chicken and vegetable mixture on top.
:- Serve hot.
