Chicken Chow Mein Chicken Chow Mein 150 gm Egg noodles1 cup Chicken (shredded)1 cup Carrot (shredded)1 cup Cabbage (shredded)1 no Capsicum (shredded)1 tsp Garlic (shredded)1" piece Ginger (shredded)½ cup Spring onions (chopped)2 tsp Soya sauce2 tsp Chilly sauce1 tbsp Vinegar1 tbsp Tomato sauce½ cup Chicken stock½ tsp Ajinomoto¼ tsp Pepper powder6 tbsp Oil for fryingCorn flour (I tbsp mixed with 2 tbsp of water)Salt (As reqd) For making egg noodles: 1)With 13 cups of water, cook the noodles on a high flame. Add salt into it. Boil, until 75% is cooked. Drain and add 1 tbsp of oil. Cool it and mix the corn flour. Heat the oil very well in a pan and deep fry the noodles. Turn over the noodles, until it is light brown. Remove and drain it.For making Chopsuey: 1)Heat 3 tbsp oil in a pan.Stir fry the garlic, ginger and spring onions for 5 seconds. Add chicken and stir fry for 2 rninutes. Add the vegetables and stir fry for 2 more min.Add stock, seasonings and corn flour mixed with water and boil, till it thickens. Remove from heat. Heat the remaining 3 tbsp of oil in another pan.Add the cooked noodles and stir and mix for 5 minutes. Transfer the noodles to a serving plate and pour the chicken and vegetable mixture on top. :- Serve hot. Chinese
