Aloo Vada

Vadas made with potato stuffing

Ingredients
  

  • 1/2 kg Potatoes
  • 4 nos Garlic pods
  • 1/2 " Ginger
  • 2 nos Green chillies finely chopped
  • Coriander leaves As reqd
  • 1 tsp Mustard seeds
  • Cumin seeds A little, Jeerakam
  • Curry leaves A few
  • Asafoetida A pinch, Kayam
  • Turmeric powder A pinch
  • Salt As reqd
  • Oil for frying
  • 3 nos Green chillies

For the Batter:

  • 1 1/2 cups Gram flour Kadala podi
  • 1/2 cup Wheat flour
  • Cumin powder A pinch, Jeerakam
  • Coriander powder A pinch
  • Red chilly powder A pinch
  • Salt As reqd

Instructions
 

  • For making the filling: 1)Boil the potatoes.
  • Peel them off and cut them into small pieces.
  • Put chillies, garlic, ginger and some coriander into the mixer and grind them to a fine paste.
  • Heat oil in a pan.
  • Add mustard seeds, cumin seeds, asafoetida and curry leaves.
  • Add finely chopped chillies and saute.
  • Add turmeric powder.
  • Add potatoes and salt.
  • Stir well and cook for two minutes.
  • Add the ground paste and stir well.
  • Make small round balls of the above mixture and keep them aside.
  • For making the Batter: 1)Mix together gram flour or besan and wheat flour.
  • Add all the powders together and make a smooth batter.
  • For making aloo vada: 1)Dip the potato balls into the batter and fry them till they become golden brown in colour.
  • :- Serve hot with fried green chillies or coconut chutney.
