Mushroom Rice Easy

Spicy mushroom and rice combo

Ingredients
  

  • 2 cups Rice
  • 1 no Onion sliced thinly
  • 1 pkt Mushrooms
  • 1 no Tomato
  • 1 tbsp Lemon juice
  • Coriander leaves As reqd
  • Mint leaves As reqd, Pudhina

For grinding:

  • 1 no Onion
  • 3 nos Red chillies
  • 3 nos Green chillies
  • 1/2" piece Ginger
  • 6 nos Garlic pods
  • 1 tsp Fennel Perinjeerakam
  • 1/4" stick Cinnamon Karugapatta
  • 2 nos Cardamom Elakka

Instructions
 

  • Heat a little oil or ghee in a pan.
  • Fry the sliced onions until golden.
  • Add the ground mixture to this and fry well, until the raw smell of the ground onion goes and the mixture turns brownish.
  • Add mushrooms & fry for some time.
  • Add tomato & fry.
  • Add rice & fry for sometime.
  • Add water which should be double the quantity of rice.
  • Cover & cook till the rice is done.
  • When the rice is almost done, add a tbsp of lemon juice, coriander leaves & mint leaves.
  • Close & cook for another 5 minutes.
