Instructions
Wash and soak the Basmati rice for 20 minutes. Drain the water and keep aside.
Heat the oil in a pan.
Fry the cumin seeds and onion for 10 minutes until the onions are golden brown.
Add the rice along with the curry paste.
Add a pint of water, cinnamon stick, sultanas, cardamom pods and turmeric. Cover and cook gently for 10 minutes.
Toast the almonds until golden brown. Stir into the spiced rice.
