Combination of Maida, buttermilk and cream of wheat

- 2 cups All purpose flour Maida
- 1 cup Sugar
- 1 cup Buttermilk Moru
- 1 cup Water or more
- 2 tbsp Cream of wheat
- 4-5 Cardamom seeds peeled, crushed, Elakka
- 4-6 drops Yellow food color
- Vegetable oil for deep frying
Mix together all the ingredients(except oil) to form a smooth batter.
Heat oil in a wok or frying pan on a medium flame.
Test with a piece of bread: should fry up crisp, without burning.
Spoon in 1 tbsp of batter at a time. Do not crowd.
When batter plumps up and rises to the surface, turn over with a slotted spoon, turn again.
Drain well on paper towels.
Let cool completely before storing in a clean, dry tin.
