MaalPuryo Combination of Maida, buttermilk and cream of wheat 2 cups All purpose flour (Maida)1 cup Sugar1 cup Buttermilk (Moru)1 cup Water (or more)2 tbsp Cream of wheat4-5 Cardamom seeds (peeled, crushed, Elakka)4-6 drops Yellow food colorVegetable oil for deep frying Mix together all the ingredients(except oil) to form a smooth batter.Heat oil in a wok or frying pan on a medium flame.Test with a piece of bread: should fry up crisp, without burning.Spoon in 1 tbsp of batter at a time. Do not crowd.When batter plumps up and rises to the surface, turn over with a slotted spoon, turn again.Drain well on paper towels.Let cool completely before storing in a clean, dry tin.:- Serve within 1 week.
