Ingredients
  

  • 400 gm Spinach chopped, Cheera/Paalak
  • 4 tsp All purpose flour Maida
  • 1 tsp Salt
  • 1 no Small onion finely chopped
  • 1/2 tsp Black pepper powder
  • 2 nos Garlic pods crushed
  • 4 tsp Butter
  • 1/2 tsp Nutmeg powder Jathikka
  • 6 cups Vegetable stock

For making vegetable stock:

  • 1 no Onion
  • 1 no Carrot
  • 1/2 cup Cabbage optional
  • 7 cups Water
  • 1/2 tsp Ginger chopped
  • 1 no Potato
  • 1/2 tsp Garlic chopped
  • 4-5 nos French beans
  • 1/2 tsp Salt

Instructions
 

  • For making vegetable stock:- Mix everything in a pressure cooker, cover it with lid and boil for 15 minutes. If you want to make a clear soup, don`t mash it. Turn off the gas. Strain using a strainer. Use the liquid for making soup.
  • For making the soup:- 1)Heat the butter in a vessel.
  • Gently sautT onions and garlic for 5-7 minutes.
  • Add the spinach and cook gently till done.
  • Slowly add the flour and the stock while stirring.
  • Bring to a boil.
  • Add salt, pepper and nutmeg powder.
  • Cover and simmer for 30 minutes. For a clear soup, sieve it. Otherwise liquidize in a blender and strain.
  • Boil again before serving. Adjust the seasoning if required.
  • Cut the bread into small square pieces and fry in butter to a golden brown color. Add to the soup while serving or serve separately in a bowl.
