Heat a pan and add all veggies, garam masala, pepper powder and salt as required. Saute for 10 minutes.
Add 1 cup water and let it cook till the veggies are well cooked. It takes around 10-15 minutes
Grind the grated coconut and cashew nuts by adding little water to make a fine paste. Transfer the ground paste into cooked veggies and mix well, Adjust the consistency by adding hot water, adjust the salt and bring to boil. Put off the flame.
Finally heat oil in a skillet and fry the chopped shallots till brown colour.
Pour it into the curry and add chopped coriander leaves. Creamy and delicious White Veg Kurma is ready now. Serve it with poori, chappathi etc..
