White Veg Kurma is a creamy and tasty curry recipe that is best to pair with poori, chappathi, porotta etc. It takes the meals to the next level, no doubt. White Veg Kurma is a tasty and popular variation to the South Indian styled Vegetable Kurma dish with a myriad choice of nutritious veggies. Traditional styled Vegetable Kurma is made with coriander powder which gives it a unique taste, flavor and color to the dish. However, White Veg Kurma is prepared without coriander and hence the white color to the gravy. The creamy white color is the uniqueness and specialty of the dish. It tastes amazingly delicious when paired with parottas. South Indian curry dishes usually circle around the usage of coconuts to prepare spicy and creamy sauce based dishes. White Veg Kurma is one such white creamy dish rich in cashew flavor. Freshly chopped coriander leaves gives the dish a distinct flavor.

White Veg Kurma is a nutritious, healthy dish full of vegetables. You can definitely add your own choice of veggies. But do not use a lot of vegetables – limiting to 4-5 will serve the purpose. In the dish I have limited the basic veggies to carrots, beans, onion and peas. Secondly, I have used freshly grated coconut for that authentic taste and flavor. Lastly, I have used a combination of coconut and cashew for that rich creamy flavor. This is a mildly spiced White Veg Kurma dish prepared with mixed veggies simmered in a rich creamy sauce. Kids love the mildly spiced creamy sauce with a delicate peppery flavor. The dish is light on your stomach. Working mothers will find the dish quite useful that requires minimum ingredients.
