3 Nos. Potatoes Medium 1 No. Onion Large 1 Tsp Ginger garlic paste 3 Nos. Green chilly 1 Cup Thick Coconut milk 1 Cup Thin coconut milk 1 Tsp Pepper powder 5 Nos. Cashew nuts 5 Nos. Raisins 3 Nos. Cardamom 1 Piece Cinnamon stick 3 Nos. Cloves 1 Tbsp Ghee Few Curry leaves 1 tbsp Oil As reqd Salt
Cook the potato by adding required salt and enough water. Mash potatoes. Keep aside.
Heat oil in a pan and add clove, cardamom and cinnamon stick.
Add sliced onion.
Add green chilly and ginger garlic paste. Saute for 5 minutes.
Then add cooked and mashed potatoes. Mix well and add pepper powder.
Add thin coconut milk and cook for 4-5 minutes.
Finally add thick coconut milk, curry leaves and combine well. Adjust the salt. When it starts to boil, remove it from the flame.
Finally heat ghee in a skillet, fry cashew nuts and raisins, pour over the curry. Delicious creamy potato stew is ready now.
