Soak your dried chickpeas and green peas Overnight or for at least 8-12 hours. Note that it will triple in size, so cover them with plenty of water. Then drain and rinse them.
Add all the ingredients to a food processor: chickpeas, green peas, onion, coriander leaves, green chilly, garlic and salt. Just give a decent pulse so the ingredients are well combined like the grains of sand. Do not grind too much otherwise you could not shape them into patties.
Transfer the mixture to a bowl. Then add one egg, stir it together until it’s fully combined and cover with plastic wrap or a lid.
Shape your falafel. You can do this by hand, Decide if you’d like round balls or flatter patty shapes. The flatter shapes are better if you plan to pan fry or bake. Any shape can be used for deep frying. Fry both sides in a medium to low flame until golden brown in colour.
In a bowl add all the chopped veggies, mayonnaise, pepper powder and salt. Combine well.
Take a burger bun and spread 2 tbsp mayonnaise.
Then fill 2-3 tbsp veggie mix and spread some tomato ketchup. Finally place a fried falafel on top of this.
Heat a tawa and toast the both sides.
Falafel burger is ready.
