Clean, wash, remove water from Lady’s fingers by using a dry cloth and cut the Lady’ fingers into small round pieces and keep the pieces aside for some time.
Heat oil in a Cheenachatti/Frying Pan and add the cumin seeds into this hot oil. Also add the chopped ginger, green chilli, tomato and onion and stir the mix well.
When colour of the mix turns into golden/brown, add the Lady’s finger pieces and stir the mix further.
Then add Red Chilli powder, Turmeric powder and required quantity of salt and cook the Lady’s finger pieces and other ingredients in medium flame (it is advised to cover the Cheenachatti/Frying Pan with a plate), without adding water.
When the Lady’s finger pieces are cooked well, add the contents of the Eggs (Yolk and White) into this mix and stir it well for about two minutes.
Add grated coconut also and stir it further.
The delicious stir fry is ready. If necessary, this thoran can be garnished with grated Coconut and serve it for Lunch/Dinner.
